			<content:encoded><![CDATA[<p>This afternoon I had the desire to make some dessert. Since we still have apples outside on and under our apple trees, I thought I would make something with apples in it. I decided to make an apple cobbler. This was my first time making, eating, and seeing an apple cobbler before (I didn’t see any images of it when I searched for recipes online).</p>
<p>I found a recipe at cooks.com for apple berry cobbler and modified it greatly it suit my preferences. Here is my version of apple berry cobbler.</p>
<p>Apple Berry Cobbler</p>
<p>Apple Berry mixture<br />
2 cups peeled cored apples cut into small pieces<br />
1 cup fresh or frozen blackberries<br />
3 tbsp lemon juice<br />
1 tbsp white sugar<br />
Several shakes of cinnamon</p>
<p>Cake Topping Mixture<br />
1 ½ cups all purpose flour<br />
1/4-1/3 cup white sugar<br />
½ tsp salt<br />
1 ½ tsp baking powder<br />
1 cup low fat berry yogurt<br />
1 large egg<br />
3 tbsp olive oil margarine melted<br />
A few shakes of cinnamon</p>
<p>Preheat oven to 350 degrees F. Prepare baking dish (I used a 8 X 12 dish) Prepare apples. Place the apple and the blackberries in a large bowl. Add the lemon juice and sugar, and stir until evenly  coated. Pour apple berry mixture into prepared pan evenly. Sprinkle with desired amount of cinnamon. Set aside. In a large bowl combine the flour, sugar, salt, a few shakes of cinnamon and baking powder. Add the yogurt and melted margerine and mix well. Add the egg and stir until well blended. The dough will be fairly thick and sticky. Spoon or place (with your hands) the dough onto the apple berry mixture. Use a rubber spatula to coat the apple-berry mixture with the dough more evenly. Place in the oven and bake at 350 degrees F for about 25 minutes. When a toothpick comes out clean the cobbler is done. Serve plain or with frozen yogurt.</p>
<p>The apple-berry cobbler turned out super yummy and flavorful.  I first had the cobbler hot out of the oven with some frozen yogurt. It was super yummy. However I had another piece later in the day when it had cooled off completely plain and it was even better!</p>
